Set out serving bowls.
Cut lettuce into shreds. Place in the bottom of each serving bowl.
Place raw bean sprouts in each bowl.
Cook noodles in boiling water until tender. Place a cup of cooked noodles in each bowl.
In a separate bowl dilute fish sauce in a cup of water
Cut chicken in shreds. Fry in oil.
Shred carrots. Add to chicken.
Slice peppers and onions. Add to chicken.
Add garlic to chicken.
Season with salt and pepper.
When chicken is cooked, top each bowl with chicken mixture.
Provide diluted fish sauce for each person to add to their taste.
