Vivian Howard's Pecan Chewy Pie
Ingredients
- Crust and streusel:
- 1¼ cups all-purpose flour
- 1 cup granulated sugar
- 2 cups finely chopped pecans, (they should resemble coarse grits)
- 4 Tbsp cold butter, divided, plus extra for pans
- 1 Tbsp water
- 1 egg, lightly beaten
- Filling:
- 1 cup white chocolate chips
- 8 Tbsp butter
- 4 egg yolks, room temperature
- ½ cup dark brown sugar
- 1 cup heavy cream, room temperature
- ⅔ cup all-purpose flour
- 1½ cups toasted pecans, roughly chopped
- 1 tsp salt
