Vivian's Squash Casserole

Ingredients

  • 2 lbs. cooked squash, drained
  • 2 medium grated raw carrots (instead of carrots, 3/4 cup bacon)
  • One can cream of chicken soup
  • One chopped onion
  • One small jar of Pimentos, drained (can also add drained green peas)
  • 1 cup sour cream
  • 1 stick of butter
  • 1 pkg. Pepperidge Farm Herb Stuffing (blue pkg.)

Directions

  1. Melt butter in skillet, add Herb Stuffing to coat with butter. Mix all ingred. including herb seasoning and butter mixture, but reserve some of this mixture for top garnish. Place in casserole dish and bake at 350° until thoroughly heated, about 30 to 40 minutes.
