Walnut Red Pepper Pesto

Ingredients

  • 6oz red pepper
  • 2 med garlic cloves
  • 3/4 C walnuts toasted
  • 1/2 -C sundried tomato oil drained
  • 2/3 C fresh basil leaves
  • 1/2C grated Parmesan
  • 1/2tsp salt 2/4tdp ground pepper
  • 1/2C olive oil

Directions

Oven at 400.
Halve, trim and seedpepper. Place skin side down on rack until skin is shriveled but not blackened. Place in plastic bag to steam for 15 min. Place garlic cloves in med sauce pan add cold water to cover and bring to a boil reduce heat and simmer for 5 min or until soft enough to pierce with a fork. Remove using slotted spoon and set aside to drain. Place all ingredients in little food processor and whir.
