Warm Energizing Salad QUINOA, KALE, NAPA CABBAGE, PISTACHIOS

Ingredients

  • 1 cup of quinoa (rinse well out before use)
  • 1 teaspoon of salt
  • 1 ½ cup of water
  • 2 cups of Napa Cabbage, thinly sliced
  • 1 cup of kale, thinly sliced
  • ½ a red pepper, cubed
  • 2 green onions, thinly sliced
  • ½ cup of roasted pistachios
  • 1 lemon, juiced
  • ¼ cup of olive oil
  • Sea salt and pepper to taste
