Warm Lentils With Wilted Chard, Roasted Beets And Goat Cheese | Feasting At Home

Ingredients

  • 3–4 beets ( enough for 2 people)
  • 2 cups cooked lentils
  • 2 tablespoons olive oil
  • ½ a red onion- diced
  • 3 garlic cloves- rough chopped
  • 4 cups (packed) swiss chard or rainbow chard- chopped ( or sub baby spinach)
  • salt and pepper to taste
  • 1–2 tablespoons balsamic vinegar
  • ¼ cup goat cheese crumbles
  • 2–3 tablespoons fresh basil, or Italian parsley.
