  • 4 Cups finely chopped kale
  • 2 Cups cooked quinoa
  • 4 Cups favorite veggies, roasted in the oven (we love acorn squash, broccoli, onions, and carrots!)
  • 4 Tbsp. Walnuts, diced
  • 1 Cup diced apple
  • 8 tsp olive oil - DRESSING
  • 2 lemons, juiced - DRESSING
  • 4 tsp maple syrup - DRESSING
  • 4 Tbsp. Diced shallot or yellow onion - DRESSING
