Zesty Quinoa Salad

Ingredients

  • 1C quinoa
  • 2C water
  • 1.5 c cherry tomatoes, halved
  • 1can black beans, rinsed and drained
  • .5 cucumber, peeled and cubed
  • 5 scallions sliced, white part only
  • .5 red pepper, diced
  • .25 C fresh cilantro
  • Dressing:
  • .5 C plain Greek yogurt
  • 1T olive oil
  • Juice from 2 limes
  • .5 t crunched red pepper flakes (I use cayenne pepper and reduce to .25
  • 2t cumin
  • 1 t salt

Directions

  1. Cook quinoa according to package directions. Make dressing and chill. Add cut up vegetables and black beans to cooled quinoa. Toss Lilly. Add dressing and toss thoroughly. Add cilantro. Refrigerate.
