Zuppa Toscana

Ingredients

  • lb Italian sausage (I like mild sausage)
  • 2 large russet baking potatoes, sliced in half, and then in 1/4 inch slices
  • 1 medium onion, chopped
  • 3 pieces of bacon (chopped)
  • 4 garlic cloves, minced
  • 2-3 cups kale or swiss chard, chopped in strips
  • 32oz. chicken broth
  • 2 1/2 cups water
  • 1 1/4 cups heavy whipping cream
  • Red pepper flakes
  • Salt
  • Pepper

Directions

  1. Brown sausage in heavy-bottomed skillet/pan, set aside.
  2. Sauté onions and chopped bacon, set aside with sausage.
  3. Add chicken broth, water, garlic to pot and stir, salt. Add potatoes, bringing to a boil, turn heat to medium and continue cooking until potatoes are tender (about 30 minutes total)
  4. Add bacon, sausage, onions.
  5. Salt and pepper to taste.
  6. Add kale and cream and Simmer for an additional 10 minutes.
