Italian Pasta Soup

Ingredients

  • 1 package mild Italian sausage
  • 2 stalks celery
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 zucchini
  • Chopped up spinach
  • 1 (49 1/2 oz) carton of chicken stock or broth
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1 big or 2 small cans of diced tomatoes
  • 2 cups small dried pasta (chickpea or rice pasta)
  • 1/4 cup fresh parsley (optional for top)
  • 1/4 cup parmesan (optional for top)

Directions

Brown sausage, drain. Cook celery, onion, garlic. Add any other veggies you want to add. (Zucchini, spinach etc) add broth, tomatoes and seasonings. Bring up to a boil and add pasta. Simmer on medium until pasta is cooked.
