Sticky Finger Pork Ribs

  • 3.5 lbs pork loin back ribs ( I use Costco so the inner skin is already removed)
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon black pepper
  • 3 Tablespoon of liquid smoke
  • 2 cloves garlic (finally chopped or pressed)
  • 1 Teaspoon salt
  • 1 medium onion
  • 1/2 cup Coca-cola (or Dr Pepper)
  • 1 1/2 cups BBQ sauce (brand up to you)
  • Recipe can easily be doubled or tripled etc

Remove the inner Skin (sinew) from the ribs.
Mix brown sugar, pepper, liquid smoke, garlic, and salt. Then rub mixture onto ribs
Cut ribs into 2 to 3 rib bone intervals
Layer ribs and onions in Dutch oven (can also use crock pot but I never have done so)
Pour coca-cola into pot
Cover and cook on low heat (200-250 degrees F) 7-9 hours or until ribs are tender ( I start checking at 6 to 7 hours. But I like it with the meat almost falling off the bone. Usually about 7 hours) ( I cook in regular oven)
Remove the ribs from the Dutch oven, drain all liquid, discard the liquid and replace the ribs in Dutch oven
Cover ribs with BBQ sauce making sure to cover all ribs. Replace lid and and cook an additional 1-2 hours
Be sure to check ribs occasionally as I have found times listed to be in excess of what is necessary
