In a blender, combine chickpeas, garlic, lemon juice, mustard, pepper, salt, cayenne, cumin and 4 tablespoons of saved liquid from chickpeas.
Process uniformly smooth and add additional chickpea liquid until desired consistency.
Store in an airtight container in refrigerator. Use as a substitute for mayonnaise, salad dressing, sandwich spread, veggie + cracker dip. Hummus tastes best after sitting overnight in refrigerator.
