In a skillet, cook mince and onion over medium high heat for 5 to 7 minutes, stirring occasionally, until mince is throughly cooked; drain and set aside.
Bring large pot of water to a boil.
Purée can of tomatoes (via food processor or blender), and set aside.
Add olive oil to skillet with crumbles and heat over medium heat, add garlic and cook for 2-3 minutes, stirring frequently.
Add puréed tomatoes, salt and pepper and cook over medium to low heat for about 7-8 minutes. Stir occasionally so the sauce doesn’t stick.
Cook pasta as per package instructions.
Stir fresh herbs into the pasta sauce.
Drain the pasta (reserving about 1/4 cup of the cooking water), and add pasta to the skillet with the sauce. Toss to coat the pasta in the sauce.
Season with Italian and cheeses.
Stir until all ingredients are well combined and cheese is melted.
Place on plate and then garnish with parsley and salad on the side.
