Potato Salad

Ingredients

  • 60# Yukon potatos (steamed or boiled, and chilled)
  • 5 bag hard boiled eggs (60)
  • 1/2 gall dill relish
  • 1 bag olives
  • 1 bottle yellow mustard
  • 1/2 cup salt
  • 1 gal mayo
  • 1 lb green onions, diced

Directions

On the side, mix mayo, mustard, salt together until well blended

Steam potatoes until tender, chill completely
Run potatos through buffalo chopper until roughly chopped
In a lexan, combine mayo sauce and remaining ingredients until well mixed

Store, label, date properly
