Kjötsúpa — Icelandic Lamb Soup – Diary Of A Tomato

Ingredients

  • 1kg to 600g of lamb shoulder (preferably with some bone)
  • 6 cups water, plus more if necessary
  • 2 teaspoons sea salt
  • Bay leaves
  • ½ teaspoon freshly ground black pepper
  • 1 onion or leek, chopped
  • 1 – 2 tablespoons mixed dried herbs (thyme, look more into this)
  • Turnips peeled and chopped
  • Carrots, peeled and chopped
  • Potatoes, peeled and chopped
  • Cauliflower (very small pieces)
