Preheat oven to 350.
Grease a 8 inch square baking dish.
Peel and core the apples, cut into fourths.
Unroll the crescent dough and wrap each apple section in a crescent roll, sprinkle with cinnamon.
Combine orange juice, butter, sugar, bring to a boil. Remove from head and add vanilla.
Pour over dumplings.
Sprinkle pecans on top.
Bake 30 minutes or until crust is golden and apples are tender.
