Place the chopped cauliflower in a food processor and pulse until a "rice- like" consistency has formed.
Heat the oil in a saute pan over medium heat.
Add the onion and garlic and cook 2-3 minutes.
Add the cauliflower and cook an additional 4-5 minutes.
Take off the heat and stir in the cilantro, lime zest and juice.
Season with salt and pepper.
To serve, place half of the cilantro rice on your plate and top with half of the sliced chicken.
