Preheat oven to 350 degrees
Season both sides of pork with salt and pepper
In a cast iron pot, heat olive oil on medium high heat
Sear pork chops browning on both sides; may need to brown in two batches not to overcrowd pot.
Return all pork chops into pot; fan out slightly overlapping to form one layer
Whisk remaining ingredients in small bowl; pour mixture over pork chops being sure to coat all chops
Bake for 45 minutes; serve hot
