Preheat oven to 200•c fanbake.
Heat oil in an ovenproof frypan. Cook onion and pepper slices over a low heat, stirring, until soft but not brown. Add garlic and spices and cook for 1-2 minutes.
Add tomatoes and simmer until reduced and lightly thickened. Add parsley, salt and pepper and stir to combine. Make wells in the mixture and crack an egg into each. Sprinkle with feta and bake until eggs are just set.
