Bourbon and Brown Sugar Peach Pie

Ingredients

  • For the All-Butter Pie Crust:
  • (makes one 9-inch lattice pie)
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 1 cup (2 sticks) cold unsalted butter, cut into 1/2-inch pieces
  • 1 cup cold water
  • 1/4 cup apple cider vinegar
  • 1 cup ice
  • For the Bourbon and Brown Sugar Peach Filling:
  • (makes enough for one 9-inch lattice pie)
  • 1 pound fresh, super-ripe peaches (enough for around 1 1/2 to 2 cups sliced), sliced into 1/2 and 1-inch chunks
  • 3 tablespoon cornstarch
  • 1 1/2 "heaping" tablespoons dark brown sugar
  • 1 tablespoon bourbon
  • a generous pinch of kosher salt
  • 1 large egg
  • 1 teaspoon water
  • granulated sugar, for sprinkling
