Basmati Rice Veggie Curry

- 1⁄2 cup basmati rice
- 1 tablespoon olive oil
- 1⁄2 yellow onion, sliced
- 1 zucchini, chopped
- 1 red bell pepper, sliced
- 1 garlic clove, diced
- 1 cup cauliflower, chopped
- 1 1⁄2 cups coconut milk
- 2 tablespoons red curry paste
- sea salt and fresh ground pepper, to taste
Cook the rice according to package instructions.
Heat the oil in a skillet over medium heat. Add the onion, zucchini, pepper, garlic and cauliflower.
Cook for 4-5 minutes.
Add the coconut milk and curry paste.
Cover and simmer for 7-9 minutes.
Season with salt and pepper and serve.
