Aip Teriyaki Meatball Stir-Fry - Autoimmune Wellness

Ingredients

  • 1 pound ground chicken
  • 1 tablespoon finely shopped green onion
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 tablespoon coconut oil
  • 2 tablespoon chopped fresh ginger
  • ½ cup grated carrot
  • 5 oz. sliced shiitake mushrooms
  • 1 cup chopped fresh spinach
  • 1 cup AIP-friendly canned chopped pineapple (I use Native Forest Organic)
  • ¾ cup coconut aminos (Big Tree preferred)
  • ¾ cup pineapple juice, reserved from can
  • 1 tablespoon arrowroot starch/flour
  • 1 tablespoon water
