Beat the eggs in a bowl with the oregano, red pepper, curry, parsley and salt and pepper.
Heat the butter or oil in a saute pan
over medium heat.
Add half of the egg mixture to the pan and swirl to cover the whole pan.
Sprinkle half of the spinach on top and let set for roughly 1 minute.
Starting from one side, roll the egg tightly to the other side of the pan.
Add the remaining egg mixture and spinach and let set for a minute.
Roll the first egg on top of the mixture to create a large roll.
To serve, cut the egg burrito in half.
