Ingredients

• 1 1/4 lb. Brussels sprouts, trimmed and halved
• 2 tbsp. olive oil
• 1/2 tsp. salt
• 1/4 tsp. pepper
• 1 lb. lamb or pork sausage links
• 1 c. couscous, cooked
• 2 medium carrots, finely chopped
• 2 small sweet peppers, finely chopped
• 1/2 c. fresh mint, chopped
