• Tamale and roe saved for compound butter
• 1 oz. cognac to deglaze (flambé)

• 1/2 cup white wine

• 2 cloves garlic chopped

• 2 stalks fresh thyme
• 1 bayleaf
• Handful chopped Parsley
• 1 tsp tarragon

• 1 cup Sauce Americaine (see recipe)

• Salt and white pepper

• 4 Tbsp room temp butter
• 1 Tbsp fresh Parsley
• 1/2 tsp french tarragon
