Potato Soup


  • 1 medium onion
  • 4 stalks celery, sliced
  • 4 carrots, sliced
  • 4 - 5 medium potatoes
  • 4 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 TBSP flour
  • 1 - 1 1/2 cup half and half


Place the onion, celery, salt, potatoes. pepper and chicken broth in a kettle.
Cook until almost done (10 minutes).
Moisten 2 TBSP flour with 1 cup of half and half, beat with a whisk, then add remaining half and half.
Add it to the soup, boil for a few minutes.
Add 2 TBSP of butter.
