Sweet Potato Souffle


  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 eggs, well beaten
  • 3/4 stick butter
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 cup drained crushed pineapple
  • Topping
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup chopped nuts
  • 1/2 cup butter, melted


Preheat oven to 350.
Boil sweet potatoes until tender.
Peel sweet potatoes, mash, and mix in all ingredients.
Pour into a 9 1/2 X 13 1/2 baking dish.
Mix topping ingredients together and sprinkle over the sweet potatoes.
Bake for 30 minutes, then let cool.
Do NOTE cover after cooling, it will get mushy.
