Paleo Breakfast Casserole


  • 2/3 pound sweet potatoes, peeled and cubed
  • 1 cup broccoli florets
  • 2/3 pound Italian sausage, casings removed
  • 2 tbsp olive oil
  • 2 tbsp parsley plus extra for serving
  • 6 eggs
  • salt, black pepper to taste


In a skillet heat 1 tablespoon of olive oil over medium heat.
Add the sausage and cook until the sausage is no longer pink.
Remove from the skillet and set aside.
In the same skillet add the remaining olive oil.
Add the sweet potato and cook for 2-3 minutes.
Add the broccoli florets and cook for 2-3 minutes.
Return the sausage in the skillet and mix to combine.
Season with salt and black pepper to taste and remove from the heat.
Pour the sausage mixture in a lightly greased baking dish.
In a bowl whisk the eggs.
Add the parsley and season to taste with salt and black pepper.
Mix to combine.
Pour the eggs evenly over the sausage mixture.
Chill, covered overnight.
Bake in preheated oven, uncovered, at 350°F for 35 to 40 minutes.
Sprinkle with extra fresh parsley, slice and serve.
