Preheat oven to 350 degrees F.
Spray muffin tin cup(s) with Olive Oil nonstick spray.
Place a few small Spinach leaves in the bottom of a muffin tin cup.
Place 5-6 diced tomato pieces on top of the spinach.
Pour the beaten egg on top of the tomato pieces, filling the cup.
Sprinkle with salt and pepper.
Add shredded cheese on top.
Bake at 350 degrees for 15 minutes. Remove from pan and let cool slightly. Enjoy!
