Stuffed Red Peppers

Ingredients

  • 2 red bell peppers
  • 1⁄2 cup sprouted lentils, cooked
  • 2 cups arugula
  • 1⁄4 cup diced yellow onion
  • 2 garlic cloves, minced
  • 1⁄4 teaspoon red pepper flakes
  • 1 ounce goat cheese (vegan: omit)
  • 1⁄2 cup tomato sauce

Directions

Preheat the oven to 350 degrees.
Cut the top of each red pepper off and discard seeds inside.
Place all other ingredients in bowl and
mix together.
Fill each red pepper with fillings – it’s OK if it spills over into the dish.
Top off with extra tomato sauce if desired.
Bake for 35 to 45 minutes.
Remove from dish and serve.
