Ingredients

  • 1 pound of lean ground turkey
  • 3 tablespoons of extra-virgin olive oil
  • 1 white or yellow onion, diced
  • 2 garlic cloves, minced
  • 8 green onions, thinly sliced
  • 1 green pepper, cored, seeded, and diced
  • 1 red pepper, cored, seeded, and diced
  • 1 yellow pepper, cored, seeded, and diced
  • 1 orange pepper, cored, seeded, and diced
  • 1 teaspoon of dried oregano
  • 1/4 cup of fresh herbs
  • 2 tablespoons of chili powder
  • 1 teaspoons of chipotle chili powder
  • 1/2-1 teaspoon of dried pepper flakes
  • 1 tablespoon of ground cumin
  • 1-1/2 cup (or 14.5-ounce can) of diced tomatoes
  • 1-1/2 cup (or 14.5-ounce can) of tomato sauce
  • 3 cups (cooked or 27-ounce can) of red kidney beans, drained
  • 1-1/2 cup (cooked or 15-ounce can) of black beans, drained
  • 1-2 cups of water (for desired consistency)
  • 2 cups of frozen sweet corn
  • 1 teaspoon of fresh black pepper
  • Sea salt, to taste
