Preheat oven to 425 degrees.
Spray cooking spray on a roasting pan or baking sheet. Place carrots, potatoes, and brussels sprouts in a single layer. Roast for 25 to 30 minutes, turning occasionally to brown on all sides. Remove and set aside.
Spray a medium-sized pan with cooking spray and heat over medium heat. Sauté the onion and garlic for about 3 minutes. Then, add the roasted vegetables and the squash, and cook for another 5 minutes.
Stir in thyme, rosemary, salt, pepper, and chopped turkey, and cook for about more minutes 10 minutes. All veggies should be slightly browned.
