African Peanut Stew

Ingredients
- First in the crock pot:
- 4 cups chicken broth
- 3 cups chopped fresh spinach
- 4 large sweet potatoes peeled cubed
- 1 tbsp XVirgin olive oil for browning meat
- 4 large sliced carrots
- 2 large chopped onion
- 1 lb pork (lean or loin) – diced or chopped for stew
- Sea salt and pepper to taste
- Sauce to blend for crock pot:
- 1 cup garlic or plain tomato sauce
- 1/2+ cup Chunky Peanut Butter
- 3 garlic cloves
- 2 to 3 tsp smoked paprika
- 1 tbsp crushed red chili flakes
- 1/2 tsp ground coriander
- 1/2 tsp kosher salt and pepper each
- 1 tbsp grated fresh ginger
- 2 tbsp olive oil
- 2 tsp cayenne
- Toppings and more Spicy goodness:
- Cilantro
- Roasted peanuts
- hot peppers of choice (sliced)
Directions
Clean and chop your veggies.
Place sweet potatoes, carrots, and spinach in crock pot.
Add broth.
Next brown your meat and onions, And add to crock pot.
Lastly, add all sauce ingredients & blend till smooth, then add to crock pot. Mix in.
Cover and cook on low for 4 1/2 to 5 hrs or high for 3hrs.
Garnish with cilantro, roasted peanuts, and peppers if desired.
