  • 1 13- to 15-oz. can coconut milk
  • 1 medium red bell pepper, thinly sliced
  • 1 Tbs. fish sauce
  • 1 packed tsp. light brown sugar
  • 2 oz. baby spinach (about 2 packed cups)
  • 1 medium lime, cut into wedges
  • 1 Tbs. coarsely chopped fresh cilantro
  • Hot cooked rice or rice noodles
