Preheat olive oil in a skillet, add the onion and fry until golden. Stir in the mushrooms and cook until they turn golden-brown.
Slowly mix in the chopped peppers and cherry tomatoes. Sauté for a few minutes.
Stir in the beans and add some chilli sauce. Sauté for a few more minutes.
Toast the bread. Serve the beans on top of the toast, sprinkled with parsley and coriander.
