Green Egg Sammy

Ingredients

  • 2 sprouted grain English muffins
  • 1 tablespoon butter or coconut oil
  • 2 large eggs
  • 1 tablespoon chopped chives
  • 2 tablespoons chopped parsley
  • 1 cup spinach
  • 2 tablespoons avocado mayo (optional)
  • 4 slices fresh tomatoes
  • sea salt and fresh ground pepper

Directions

Heat the butter in a saute pan over
medium heat. In a bowl whisk together
the eggs, chives, parsley and spinach.
Add this to the pan and cook for 2-3 minutes or until the eggs are cooked.
Toast the English muffin and spread some of the mayo on the bottom half.
Top with the tomatoes, eggs and other half of the English muffin.
