15 Minute Spicy Peanut Noodles

Ingredients

  • NOODLES
  • 2 tbsps avocado oil + toasted sesame oil combined for sauteing
  • 1 shallot thinly sliced
  • 2 green onions slices
  • 1 cup julienned carrots I buy the pre-cut to keep things quick & easy!
  • 1 red bell pepper thinly sliced
  • 3-4 cups loosely packed chopped Chinese broccoli*
  • 1/2 pack pad Thai rice noodles
  • SPICY PEANUT SAUCE
  • 1/3 cup natural creamy peanut butter
  • 1/4 cup low-sodium tamari
  • 1 tbsp pure maple syrup
  • 1/3 cup hot water
  • 1 tbsp garlic chilli sauce I use this one by Sambal
  • 1/2 lime juiced
  • GARNISH
  • chopped unsalted roasted peanuts
  • green onion tops
  • fresh cilantro chopped
