Ingredients

  • Tuna: 2 cans (packed in olive oil, drained)
  • Dressing:
  • {1}{2}\) cup mayonnaise,
  • 2 tsp wasabi paste,
  • 1 tbsp lemon juice,
  • 1 tbsp apple cider vinegar,
  • 1 tbsp agave or honey
  • Veggies:
  • {1}{4}\) cup red onion,
  • {1}{4}\) cup dill pickles,
  • {1}{4}\) cup diced green apple,
  • {1}{4}\) cup frozen peas,
  • {1}{4}\) cup corn kernelsTopping:
  • 1 cup crispy jalapeño chips (crushed)
  • Optional: 1 tbsp Italian dressing

Prepare the Base: In a large bowl, mix the drained tuna, lemon juice, vinegar, red onion, pickles, apple, corn, and peas.Combine Dressing: In a separate, smaller bowl, whisk together the mayonnaise and wasabi paste (and Italian dressing/agave if using).Mix: Combine the dressing with the tuna mixture, stirring well to coat.Add Crunch: Fold in the crushed jalapeño chips last to maintain crunch.Serve: Enjoy immediately or, as McConaughey suggests, let it sit in the fridge for a day to allow the flavors to combine.
