Ingredients

  • Caramel Syrup
  • - 1/2 cup sugar
  • - 2 oz. Water
  • ---------------------------------------
  • Custard
  • - 1 can condensed milk
  • - 2 oz water
  • - 5 eggs (2 whole, 3 yolks)
  • - 3 tbsp sugar
  • - 1 tsp vanilla

Directions

  1. prepare the caramel syrup in the mold
  2. stir the sugar and water in the mold until it boils
  3. keep stirring constantly until sugar has dissolved, there are no lumps.
  4. caramel color should be a honey color
  5. Custard
  6. mix all the custard ingredients in a bowl
  7. mix very well
  8. pour the mixture through a colander into the flan mold
  9. place in the oven in "baño de Marías"
  10. bake in oven at 350 degrees for 1 hr 30 min.
  11. Test the mixture after 30 min. If you place knife and it comes out clean it is done.
  12. Let it sit for a while about 20 min. Then place lid back on the mold and refrigerate for couple hours flip over into a nice plate before serving.
