In a bowl whisk the egg yolks, 1 cup of sugar and the salt.
Slowly whisk in the hot whipping cream, add the vanilla and divide the mixture evenly into the 10 ramekins.
Place ramekins in a baking pan, then pour boiling water in the baking pan half way up the sides of the ramekins.
Baked in a preheated 290 degree oven 45-50 minutes until egg mixture sets.
Remove ramekins from the pan and cool, then refrigerate until ready to serve.
To serve, sprinkle 1.5 tbsp of sugar over the top of the creme brulee and using a blowtorch melt the sugar. As it cools a candy shell will form. If a torch isn't available place under a hot broiler until sugar melts.
