Preheat air fryer - Set to 400°F (205°C) for 3–5 minutes.
Prepare coating - Crush pork rinds very fine (food processor works best) Mix crushed pork rinds with seasonings in a shallow bowl.
Egg wash - Beat eggs in a separate bowl.
Coat the chicken - Dip chicken pieces into egg. Let excess drip off. Press firmly into pork rind mixture so they’re well coated.
Air fry - Lightly grease air fryer basket (or spray nuggets lightly).
Arrange nuggets in a single layer (don’t overcrowd). Cook at 400°F for 8 minutes, flip, then cook another 5–7 minutes until Golden and crispy and Internal temp reaches 165°F
