Ingredients

  • 3 medium sized potatoes cut into long medium-thick slices
  • 1 eggplant cut into 8 cm long medium-thick slices
  • 4-5 garlic pods finely chopped
  • Turmeric powder
  • Chilli powder
  • Garam masala
  • Amchoor powder
  • Salt to taste

Directions

  1. Heat oil in a pan over medium flame.
  2. Add garlic, cumin seeds. Allow to splutter
  3. Add potatoes. Fry till golden and almost cooked
  4. Add aubergine, mix till evenly coated with oil and fry till evenly heated.
  5. Cover and cook on medium low flame until done, stirring occasionally.
  6. Serve with chapatis.
  7. Very good accompaniment for tomato rice.
