Anise Seared Scallops with Pea Risotto

Ingredients

  • Pea Risotto
  • 1 tablespoons olive oil
  • 4 oz diced yellow onion
  • 1 cup Arborio rice
  • ¼ cup white wine
  • 4 cups chicken stock
  • 6 oz fresh peas
  • ¼ teaspoon lemon zest
  • 3 tablespoons unsalted butter
  • ¼ cup Parmesan cheese
  • salt and pepper, to taste
  • Anise Seared Scallops
  • 4–6 scallops per person
  • 3 tablespoons anise seeds
  • 1 tablespoon garlic powder
  • 2 tablespoons oil
  • ½ lb sliced shiitake mushrooms
  • salt and pepper, to taste
