Another Mac and Cheese

Ingredients

  • 16 oz. macaroni
  • 2 cups sharp cheddar
  • 1½ cups mozzarella
  • 1½ cups jack cheese
  • ¼ cup flour
  • 1 stick butter
  • 2 cups half and half
  • 2 teaspoons vegetable oil
  • 1½ teaspoons salt

Directions

  1. Cook the macaroni according to directions on box.
  2. Cool in running cold water.
  3. Toss in vegetable oil to avoid sticking while you make béchamel for the cheese sauce.
  4. In a large pot, melt butter on medium heat.
  5. Add in flour to make a roux.
  6. Cook roux for 10-15 minutes on low, stirring the whole way through to prevent burning.
  7. While stirring with a whisk, slowly add in half and half.
  8. Allow to thicken by simmering on low for 10-15 minutes.
  9. Be sure to stir frequently to prevent burning.
  10. Once béchamel has thickened, turn off heat.
  11. Add in the cheeses and salt.
  12. Mix well until cheese is completed melted into sauce.
  13. Add macaroni into sauce. Mix well and serve
