Apple & Banana Empanadas

Ingredients

  • Apple Pie Filling
  • 2 tbsp butter (1/4 stick)
  • 2 large apples - peeled and cubed
  • 1/4 cup sugar
  • 2 tbsp packed brown sugar
  • 1 tsp lemon (1 slice will yield 1 tsp)
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • pinch of salt
  • 2 tsp cornstarch
  • 1 tsp water
  • Banana Filling
  • 2 bananas sliced
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • Empanada Dough
  • 3 cups all-purpose flour
  • 1/4 to 1/2 tsp salt
  • 6 oz unsalted butter (1.5 sticks)
  • 1 egg
  • 1/4 to 1/2 cup of water or milk (adjust as needed for soft/smooth dough)
  • 1/2 cup sugar
  • 1/2 tsp ground cinnamon
  • 1 egg

Directions

  1. Apple Filling
  2. 1 Melt butter in medium sauce pan over medium heat
  3. 2 Add apples, sugar, brown sugar, lemon juice, vanilla, cinnamon and salt
  4. 3 Cook, stirring occasionally, until apples are soft (about 10 min)
  5. 4 Mix cornstarch and water in a small bowl until cornstarch is dissolved
  6. 5 Add cornstarch mix into sauce pan and continue to stir until thickened
  7. 6 Transfer to heatproof bowl and let cool to room temperature
  8. Banna Filling
  9. 1 Add all ingredients into a bowl and mix together
  10. Empanada Dough
  11. 1 Mix flour and salt together in stand mixer
  12. 2 Add in the butter and mix
  13. 3 Add the egg and water/milk in small increments while mixing
  14. 4 Keep mixing until a clumpy dough forms
  15. 5 Split the dough into 2 large balls
  16. 6 Roll dough out into very thin sheets and cut out round disk shapes
  17. Once apple filling has completely cooled, begin making empanadas
  18. 1 Take a round disk and add 1 tbsp of either filling into the middle of the disk and fold over and pinch edges or fork to seal (you can brush edges with egg to assist with sealing)
  19. 2 Cut slits onto the tops
  20. 3 Brush top with egg wash
  21. 4 Mix sugar and ground cinnamon together and sprinkle on top
  22. 5 Preheat oven to 400 degrees and bake for 20 minutes for a flaky/crunchy finish
  23. 6 Preheat oven to 425 degrees and bake for 10 minutes for a softer finish
