1 Melt butter in medium sauce pan over medium heat
2 Add apples, sugar, brown sugar, lemon juice, vanilla, cinnamon and salt
3 Cook, stirring occasionally, until apples are soft (about 10 min)
4 Mix cornstarch and water in a small bowl until cornstarch is dissolved
5 Add cornstarch mix into sauce pan and continue to stir until thickened
6 Transfer to heatproof bowl and let cool to room temperature
Banna Filling
1 Add all ingredients into a bowl and mix together
Empanada Dough
1 Mix flour and salt together in stand mixer
2 Add in the butter and mix
3 Add the egg and water/milk in small increments while mixing
4 Keep mixing until a clumpy dough forms
5 Split the dough into 2 large balls
6 Roll dough out into very thin sheets and cut out round disk shapes
Once apple filling has completely cooled, begin making empanadas
1 Take a round disk and add 1 tbsp of either filling into the middle of the disk and fold over and pinch edges or fork to seal (you can brush edges with egg to assist with sealing)
2 Cut slits onto the tops
3 Brush top with egg wash
4 Mix sugar and ground cinnamon together and sprinkle on top
5 Preheat oven to 400 degrees and bake for 20 minutes for a flaky/crunchy finish
6 Preheat oven to 425 degrees and bake for 10 minutes for a softer finish
