Apple & Oat Mini Muffins

Ingredients

  • 2 apples, peeled and grated
  • 1 cup (90g) of oats
  • 1/2 cup (125ml) of apple sauce (unsweetened)
  • 2 medium eggs

Directions

  1. 1. Preheat the oven to 180°C
  2. 2. Line or grease 18 holes of a mini-muffin tray
  3. 3. Mix the grated apple, oats, apple sauce and egg in a bowl until well combined
  4. 4. Spoon the mixture into the prepared muffin tin
  5. 5. Bake for 15-20 minutes or until set and lightly golden
  6. 6. Serve and enjoy once cooled.
