Arancini Balls & Spicy Tomato Sauce

Ingredients

  • 1L (4 cups) Massel chicken style liquid stock
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 4 garlic cloves, crushed
  • 330g (2 cup) arborio rice
  • 40g (1/2 cup) shredded parmesan
  • 3T fresh parsley, chopped
  • 3-4 eggs
  • 180g (2 cups) dried (packaged) breadcrumbs, panko best
  • 150g (1 cup) plain flour
  • 100g mozzarella, cut into 1.5cm pieces
  • Vegetable oil, to deep-fry
  • Sauce -
  • 2T olive oil
  • 1 small white onion finely chopped
  • 1t chilli flake
  • 1/8t cayenne pepper
  • 1 tin chopped tomatoes
  • 1T balsamic vinegar
  • 1T sugar
