  • 1 teaspoon Peni Miris Cinnamon
  • 2 tablespoons (28g) unsalted butter, softened
  • 2 medium zucchini (about 10 to 12 ounces or 283–340g total)
  • ½ cup (113g) plain, full-fat yogurt
  • ½ cup (118ml) canola oil, or other neutral oil
  • ⅓ cup (64g) granulated sugar
  • 2 large eggs
  • 2 tablespoons (30ml) molasses
  • 1½ teaspoons vanilla extract
