avocado breakfast casserole (can be made GF)

Ingredients

  • California Avocado Breakfast Casserole
  • Cook Time: 35 minutes
  • Ingredients
  • 1 8 ounce package Pillsbury Crescent Rolls (optional)
  • 10 slices cooked bacon, cut into bite sized pieces (optional)
  • 1 1/2-2 cups shredded hash browns (thawed, enough to cover bottom of pan)
  • 1 California Avocado, diced or guacamole
  • 1 cup cherry tomatoes, sliced in half (optional)
  • Half of a small sweet onion
  • 1/4-2/3 cup shredded cheddar cheese
  • 5 eggs (can add more)
  • 1/4 cup milk
  • Kosher salt, cracked black pepper, jalapeno sauce, crushed pepper, and salsa to taste

Directions

  1. Lightly spray with cooking spray a 9×13 glass (i used metal) cake pan. Press crescent rolls on bottom and up sides of pan.
  2. Layer bacon/turkey, hash browns, onions, California avocado, and tomatoes on top of crescent roll dough.
  3. In a separate bowl, beat the eggs and milk together. Pour egg and milk and seasoning mixture over the top of other ingredients in the 9×13 pan.
  4. Sprinkle cheddar cheese over the top. Bake in 350 degree oven for 30-35 minutes.
