Avocado Cilantro Cream Pasta

Ingredients

  • 16 oz. angel hair pasta, dry
  • 1 tsp. olive oil
  • 6 large garlic cloves, sliced
  • 2 large ripe avocados, pitted
  • 1 large bunch of cilantro (stems and all)
  • 3 limes, juiced
  • 1 small knob of fresh ginger, peeled and rough chopped
  • 1/2 cup plain non-dairy milk
  • 1 Tbsp. olive oil
  • 1 Tbsp. agave nectar or maple syrup
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. crushed red pepper flakes

Directions

  1. Bring a large pot of salted water to boil for the pasta. When boiling, cook according to package which is usually about five minutes. Drain and return to pot.
  2. Meanwhile, heat the 1 tsp. of olive oil in a small saute pan.
  3. Add the garlic and saute for a few minutes, until browned and fragrant.
  4. Remove from heat.
  5. In a food processor, add the remaining ingredients including the sauteed garlic.
  6. Process until smooth and creamy.
